fattening heritage turkeys?

Thanks Tom, for the info. Do you think a turkey would ever be "too old" for butchering? Would a 2 or 3 year old turkey be fine, if you cooked it slow, etc?
 
My feelling is that any poultry is never to old to butcher. You just have to get more creative in how prepare and you cook it.

With a bird that old you may have to de-bone the turkey first, before cooking, and use a mechanical tenderizer. the slow cook the meat. Or maybe grind it up and make sausage out if it, or even make Turkey jerky.
