Favorite canning recipes (and sharing my spaghetti sauce recipe)

I’m sitting here waiting for my spaghetti sauce to boil down and otherwise twirling my thumbs. I’ve made only one spaghetti sauce recipe every year for the last four years. I’ve never tried anything else because this one is so delicious! I usually use fresh herbs or a combo of fresh and dried and I always pressure cook my tomatoes rather than water bath can, just to ere on the side of caution. 25 minutes at 10 psi for quarts and 20 for pints.

I didn't garden this year, so likely won't can anything, but will save that for sure.
I just use the Ball Blue Book for basic canning.
I do agree with you, I pressure can tomatoes too. The only thing I use a water bath for is jams and jellies.

I bought a Better Homes and Garden canning book which has had some excellent and unique canning recipes. Unfortunately I rarely am able to grow enough to make most of those recipes worthwhile. I even the spaghetti sauce I normally cut into halves or thirds.

My garden really didn’t do that well :( I expanded from 10’x20’ to 40’ x 50’, doubling almost everything I grew, and yet my yields have been much the same this year. Very disappointing. Most of my tomatoes have blossom end rot or have been munched on by hornworms.

My BH&G "Cookbook" does have a canning section, but most of it's basic as well. I don't cook fancy anyway, so a lot of recipes I would probably never use, but I still like to look at them:)

I considered putting in a small garden this year. I'm glad I didn't, it would have rotted. My fields have been flooded or swampy quite a bit this whole year. Just too much rain.
You have years that are really good and some that you don't do so well.

Funny yours has flooded as we’ve had excessive drought! It’s been a hot year.
