What is everyone's favorite thing to do with your quail eggs?

Recipes?

My favorite thing to do with quail eggs is to hatch them, but due to pen space and other requirements I have to keep that in check.

I can't think of a fancy recipe for quail eggs as they are delicious pretty much any way you cook them. The only things I can think of that they are not good substitutes for chicken eggs is, fancy baked goods. The kind that calls for X many yolks with Y many whites or only one or the other.

I like to eat them fried and my niece just loves them! They are good hard boiled and I plan on making deviled eggs this Christmas with them. They should be perfect bite sized appetizers! Haven't ever tried that yet, but I bet they'll be cute and I have a deviled egg plate and two per spot should fit nicely.
