I have 25 chicks, they are about 9 weeks old now and I see that my one and only Fayoumi is a
rooster. He is very quick but also very nosey and hangs out with me whenever i'm in the coop.
I kinda like him, now that i've got used to the idea that she is a he.

BUT

The girls are all different, and I have quite a few cochins and polishes, two faverolles, brahmas etc:...
so I'm wondering about whether it's a good idea to let them hatch any chicks...

I like the hardiness of the fayoumi but ....... he is so different, i'm worried about what the offspring
would be like.

Well, now, I don't know what that breed is like, but if he's good to the girls and doesn't rough them up too much when they mate (in the future), then why not let him stay. If you want to allow them to breed, they will be mixed, but no matter what rooster you had, you would have mixed breeds. I do believe that sometimes, mixed breeds are hardier than pure bred chickens. It would be fun to see what kind of chicks they would produce.

If you don't plan on hatching your own eggs, then don't worry. Just make sure you collect your eggs daily, and then no development will happen inside the eggs, and they'll taste and look exactly like an infertile egg.

Take care and enjoy those chickens,
Sharon
