Thanks for all the suggestions -- Yes I realize 2000lbs is probably a bit much, but the mill has a surcharge for anything under a ton, plus we also have about 20 layers to feed, I can use the leftovers for them.  The protein% will probably be a bit high but I figure I can thin it out with cracked corn or something.
As for finding a mill - I just started calling all the local Farmer's Co-op's. Only took a few calls before I got one to point me in the right direction. The nearest one to me is only about 25 miles, short drive to save about 40% on my feed costs.
Ordered a scalder, bags & rings tonight. Still looking for that $50 automatic plucker but haven't found one yet
