I for one do not like Starlings. They are non-native and very destructive. They are not protected.
I think it would be a lot of work to process them for feeding to chickens though. Chickens that live outdoors are exposed to numerous diseases and small predators such as mites and lice. Even with this in mind I have some reluctance to feed captive chickens any animal found dead without knowing the cause of death. Trapping starlings seems like too much work.
