Female or male goose??

You can try vent sexing but I would be afraid of hurting them since they are grown geese and not babies. If you do try it I would guess you would notice right away if it's a boy, I've read that the penis is quite large. I have two girls and if I hadn't seen them both lay eggs I would have guessed that one was a boy. She is much larger than the other and has a quieter, lower voice, but she is definitely a girl.

My gander did mate her in the end the other day so I guess she is a female, and she allowed him to mate her... Just no eggs yet??

I think I have two ganders, and they definitely don't allow each other to mate them. They keep trying to mate in the pool.

One of them is a gander for sure - his penis showed one day when he was preening himself. It was about an inch and a half long and a quarter of an inch wide - it looked like a small pink crooked earthworm.

If your goose allowed your gander to mate her then that is a good sign that she is indeed a goose. It's still winter, so be patient about the eggs.
