Fermenting process question

update: I covered the 1/2 gal mason jar I am using with cloth rather than plastic wrap last evening. checked this morning; I peeked under the cloth expecting maybe tiny bubbles at best. its only been 30 hrs. Well, OMG !! Mt Vesuvius style eruption avoided due to the cloth. Those little biologic machines threw it into over drive and expanded all night long. I gave it a stir. champagne bubbles started rising everywhere. I read the signs, saw into the future and clearly envisioned an epic explosion that would force me into an all day scraping and cleaning gig from ceiling to floor. So I transfered half to a second jar.
crisis avoided, I think.
its got to be the quality feed. thanks everyone. wish I thought to take a pick..it looked like a rising soufflé
