Fertilisation Question

I'll be getting my first quail in the new year.The plan is to keep 8-10 females as layers, and occasionally incubate a few clutches and raise these as meat birds.My question is "If I introduce a few girls to the roo, are all the eggs they lay for the rest of the season going to be fertilised or do they have to be "serviced" each time they lay?"
This may seem like a dumb question, but the only animals I've incubated before have been reptiles and they vary from species to species.Thanks in advance for the help.

One other question.Can roos be kept in pairs if there are no hens in with them to cause fights.

kind of an offshoot to the original question, but i picked up some a&m and brown coturnix that were put in the same pen. I was gonna wait 7-10 days to start collecting their eggs for incubation just to make sure i didn't get some crossbred action......but from your post it sounds like 5 days would be long enough?
