When my drake mounts my hen, is she automatically fertilized every time? How will I know when my hens eggs are ready for the incubator?

One if he is actually breeding and she doesn't reject his deposit. Open eggs up and wait until you see bullseye yolks
 
No, female ducks can actually internally redirect the drake's penis so no fertilization occurs. As Jacin said, only way to know for sure is to crack open the eggs until they start having the 'bullseye' indicative of fertilization.

I opened 1 several days ago and it was infernal. I've had in all 8 eggs 🥚 as of today. I see them mating but I'm uncertain if she's fertilized. I don't know which hen is laying other than there's 1 egg every day except 2xs in 2 weeks...🥚🥚🥚

No, just one every day or even every three.

If your girls are young, as SilverBirds said, you should wait a few months before incubating.
