I love fiddle heads I first had them in Maine when I was at school. find them now every season and cook them the same way as my asparagus, with garlic and butter and white wine

They taste like a mild spinach, but not. Very hard to explain. If young enough, no bitter taste, but the older they get, the more bitter they can be. I love them! I try to buy in bulk from someone local, I eat as many of the I as can fresh , then balance and freeze even more.Fascinating!!! What do they taste like? I have been curious about them for years------ever since I saw them on an episode of the Frugal Gourmet.
