first bread in the machine!

Oven baken bread beats the bread machine every time due to better heat control / heat distribution and better control of timing.
 
anyone know how to make pumpernickle bread in their machine??
I love dark breads but can't find a machine receipe for it.
 
I found sourdough biscuits and rolls on the link listed.

Anybody have a good sourdough bread recipe for the machine?

I've tried a couple that I found online and they always seem to be mealy.
 
If youare having a problem with your breads rising, make sure that when you add your salt it is not near the yeast. The salt kills it.
 
Well my bread did better this time than most other times. What I tried was to dissolve the yeast in pretty warm sugar water (like my aunt used to do when she made bread without a machine) first and let it sit for a few minutes. Then I put in the rest of the ingredients on top of the yeast + sugar water mixture.... salt on the very top of all the rest of the ingredients. This concoction was put into the machine and it turned out pretty well... rose higher than the loaves in the past following the direction from the machine manual. Try again but do what I did the yeast and see if it helps your loaves too.

So what are some recipes for a bread machine? I have one but don't use it much because I need some good recipes.

I have a real heart for bread machines and sometmes get upset when people do not use them properly then blame the machine. All new machines come with directions - use them! They advise to put the ingredients in the pan in the orderer given. Every book I have seen adds the yeast last. Make a tiny well in the top of the flour and put it there. All ingredients should be room temp, except water and/or milk and it will tell you about the correct temp. After awhile you get a feel for it. I buy the big pkg. of yeast from Sam's and keep it in the freezer. It keeps forever! (that is the one exception I make as far as room temp, I just put it directly on the flour from the freezer and no problem)

Instruction books also have recipes, use them, at least at first. They were designed for that machine. If you can get ahold of a Fleischman's bread machine recipes they are very good. But not all recipes work in all machines. I tasted some wonderful bread at our State Fair a few years ago, but the reipces did not come out good in my machine. I don't was ingredients, if it does not work well the first time it is history.

I just cannot stress enough to follow the instructions for assembling your ingredients. It is crucial. When you find those recipes that work and are delicious hang onto them. Most of all just enjoy the wonderful bread that come out!

i did follow the directions, got the right ingredients and am not blaming the machine. Im using the book that came with the machine. I may put the salt in the bottom with the water next time as it was mixed in the flour and someone mentioned the salt touching the yeast was not a good thing but it tasted good and I was happy with how it came out.
