first covey of quail!!

i wonder if they taste like wild hog??

I've never had wild hog, we don't have them in Oregon. I have had Bobwhite and Valley but yet to taste coturnix. I have not culled a quail in years. Does anyone have a good site to refresh on?
 
I processed and cooked another 2 dozen quail;(didn't actually cook all of those...just 6) Tarragon quail is wonderful. Processed one I didn't really mean to and found out she was full of eggs. One with hard shell and many in various stages of development. It was very interesting to see. I learned a lot looking at the ovarian cluster. Its getting easier to do the processing. I still don't like to look them in the eyes, but do thank them for their gift. I know. It sounds corney, but it works better for me that way.
