You do have to let them relax, unless you freeze them, the freezing and thawing will cause them to relax too...

Unless the rooster is a year or more old, I see no reason to brine.  If they are really that tough pressure cook them. that softens anything.    We eat our layer flock roosters at around 20-26 weeks and they are not tough.


Good to know! I'll see if I can tell any difference the next time I have to kick some roos off the island. I swear, we have the worse luck with roos.

On a happier note, I hear my silkie cross chicks from their eggs about to hatch. Of the 8 I put in the incubator, 5 seem to have been fertilized and developing right!
 
I can't stand the incubator being empty...so..since it appears the Saipan cockrels have figured out which end is which on the hens I'm saving eggs to try.
