Fodder? Have you tried it?

A friend talked about his uncle growing fodder for his animals. Do any of you have experience or advice whether it be pros or cons? My birds already get layer pellets and goodies from the kitchen.
 
Is alfalfa hay considered fodder? I give my chickens and quail alfalfa hay for nesting, coop bedding, and to eat/play. I also use the loose leaves as brooder bedding the first week. Everybirdy loves it.
 
Fodder, from what I understand is sprouting seed and feeding to your chickens. It's grown densely and quickly, only taking a few days per tray. After Thanksgiving I'm going to do a little more research.
