Hi, I’m new to birds, formerly seen as a novelty species..anyway. I WAS an equine specialist but Now I am a novice crazy chicken lady.
My 8 month old mixed flock free ranges several acres and is locked in at night.. I am dealing with external parasites ( northern fowl mites I think) and cold damp weather, ..a croupy rooster who is actually an emotionally invested lover to 15 girls. Lol! ( he lets them eat first, he runs when they cry wolf and imitates their vocalization. Anyway I changed from straw to shavings.. anyone else have issues with straw??

I don't think mites have a preference of bedding.
Be sure to treat all the cracks in your coop.

Are you planning on using Permethrin?

Welcome to BYC. I have heard that straw can harbor mites, so I would get some permethrin at your local TSC or feed store. The Gordons or Martins concentrate mixes with water in a soray bottle or garden sprayer for the chickens or the coop treatment. Mites need to be treated at 7 day intervals to get the mites and the newly hatched larvae. It sounds like you have a good rooster, and those are keepers. Can you post some photos of your housing (Chickens too)?
How much ventilation do you have?

You mention you have a Croupy rooster - is he having respiratory symptoms....sneezing, coughing, rales? Any mucous from the nostrils? Watery/bubbly or pus in the eyes?
Inside of beak is clear? (no canker, yellow or white pasty material)

Is his crop emptying by morning?

I would use a poultry spray or dust for the treatment of mites. Clean out all bedding and treat your housing including nesting boxes and roosting bars. Re-peat in 7-10 day intervals.

Lastly, where are you located?
What do you feed your birds?
