I candle my eggs about twice a week until lockdown. Never had a problem. Maybe do it at 10 days to eliminate non fertile ones. I would just use a standard egg development chart, since the outcome of the hatch is the focus.
I would make sure to keep a daily or twice daily log of temperature and humidity for each bator. The science fair display always looks better with a lot of numbers and data
Maybe make some graphs/charts with the data too!

You could hatch the chicks out ahead of time, by a few weeks, so you can tell gender, Or, use sexlink eggs so you can tell immediately.
