Chilli flakes contain
capsaicinoids, anthocyanins, flavonoids, phenolic acids, carotenoids such as lutein, lycopene, and zeazanthin, vitamin Bs, vitamin C, which is high in red peppers, vitamin E, which is high in dried chili peppers, fiber, minerals such as: iron, calcium, copper, manganese, molybdenum, amino acids such as: tryptophan, phenylalanine and lysine.
 
It's not just a possibility, it's the guaranteed outcome.
Are you adding any vitamin mixes to your ingredients?
Edit- that would skew the experiment but it would be better for your birds.
You appear to be very sure of this, have you ever tried my method? The more I discover in life the less sure of anything I become.
Plenty of vitamins in the mix, the point of the experiment is to find out to what extent they are capable of self regulating their intake.
 
They're just going to eat whatever they find the tastiest, they won't spread them selves out over the different ingredients for a healthy diet.
Picking out their favorite food will result in nutritional deficiency.
Some animals do have the ability to eat what they need to, to some extent.
I know with goats for example, that is definitely the case.

Are you only going to be offering dry foods or have you considered various fresh options (I've offered sprouted seeds to my quail on occasion)?

How would old farmers raise their birds? Commercial feed has not been around very long. My grandparents raised lots of healthy chickens. They only supplemented with corn, and their chickens free-ranged where they had a large access to seeds, plants and insects. Not much different than what the OP is doing, just not controled. Their flock thrived.
