Freezer Meals

Well, I could too but my 13yr old is a boy who is happy to eat peanut butter with his fingers right out of the container. The only kid who loves to cook is my 4yr old. She made mashed potatoes, chicken fried steak, and homemade bread 90% alone. She will go whip out a batch of cookies all by herself lol and they are pretty good.

I do understand about the lack of desire to cook. If I am not home DH eats chips & salsa!!!

You didnt ask for breakfast recipes--- but I do muffins, French toast sticks & breakfast burritos they all freeze great!

That may be what he prefers to do but I'm sure if he was given the job of cooking that he has the mental capacity to learn...and you will be there...laid up but still there and able to encourage him. You can let the 4yr old help him.

When I was 13 my dad died in an industrial accident and my mom went to school to be a nurse...she was in the classroom for 4 hours then she worked on the surgical floor at the hospital as a nurses aid for 4 hours until she got her license. She took the 3pm to 11pm shift so my sister would only be with the baby sitter for a couple of hours a day. I had an 8 year old brother and a 2 year old sister. My brother came home from school to the house on his own and I would pick my sister up at the neighbor's who kept her and I cooked dinner and took care of my younger siblings. I got my driver's license when I was 14 as a hardship case so we could have transportation if we needed it.

Kids are capable of a lot more than people give them credit for. My sister was 8 and my brother was 14 when I got married. My brother had pretty much taken over the baby sitting, house keeping and cooking by then because I was working and going to school. We are all three college graduates and all three married and have great families. We missed our dad but none of us felt that we didn't have a good childhood. But then we had a really great mom who loved us and tried to make sure we always knew that we were loved no matter what!!! But she also let us know that she expected us to take responsibility as members of the family and do our part.

What about a no meat chilli? I would eat it.. Also I freeze ahead, pancakes and waffels.. I just slighty undercook, put them through the toaster ones or twice, depending how frozen they are..

Also what about making up your fav. muffin recipe (here I do a blueberry, whole wheat, wheat bran) For brecky, I go easy on the sugar, high on the blueberries.. So what about doing serval "dry batches" then have the list of wet to add to it... So then even when you have too, it's easier..

i will keep thinking, do you's eat meat at all?

There is a biscuit recipe on here somewhere that is really good too. You can cut them and freeze them on a sheet then put them all in a big freezer bag and just take out what you want to cook when you want biscuits. Cook them from frozen state.
