8 pound turkey smoked over apple, cherry, touch of mesquite



13 1/2 lb turkey roasted in the oven




On both, the white meat was lusciously juicy, the dark meat moist and incredibly flavorful.

The one cooked over the wood fire had a nice smoke ring and amazing flavor. Neither turkey was brined or stuffed, but both were internally basted with rosemary/thyme butter under the breast skin.

Lots of juice in both...and tons of leftovers.
You ever consider opening a restaurant? Sounds like you'd be a natural.

It's the only one, and might stay that way... had some late quitters and lost one last night and one this morn... pipped wrong end, upside down...

I didnt want to answer openly on the other thread, let me try to add more to this, he asked more info on my location and I didnt feel that I should answer him openly. before you all read that like it is written!

Yes Ma'am, I got it. I first discovered the place back in the very early 70's, living in NJ & driving back to MD once a month. Back then, it was just a stainless steel railroad car. If you look close today, and know where to look, you can see where the addition was made. Good eats every time I've been there, but no reason to be in that part of PA anymore.

so many new places along the interstate now and with all the amenities at the new flyin J and pilots not many stop at those old ones anymore unless their fixen for some fun at the little hotel that sits across.
