My favorite thing in the world is a boiled egg. I got into backyard chickens for the boiled eggs. Now I've found that it is impossible to execute a nice boiled egg with fresh eggs. they just won't peel properly, and overcook easily. Anyone hav suggestions
?
 
I make mine in the electric kettle. Saw it on an Alton Brown show one time. It works great! Just set and let it come to boil. Then let the eggs sit in the hot water for 12 minutes. Perfect every time.
 
Put them in a streamer for 15 to 20 minutes. I've never seen eggs peal so quick. Make sure to put them in cold water once they are done. It keeps the yolk beautiful.
 
Steaming for 20 minutes also works great for me. Perfect easy to peel eggs even with eggs just laid that day

Is it possible that my chickens, who just started lay about three to four weeks ago, are laying defective eggs? I've been steaming eggs per Alton Brown for a few months now, and the eggs from my chickens still don't peel well, and turn stiff and rubbery in some places.
 
Are the eggs still a bit on the small side? 15-20 minutes is what I use for large to ex large eggs. Over cooking will make them rubbery
