fresh goat cheese

i'm getting a gallon of fresh goats milk soon, i am a huge cheese head, i've been to france and had the best cheeses in the world.

wanting to know if anyone here has SOLID recipe that they have used. i don't really care what kinda cheese it is, as long as it works, i love me some fresh goat cheese.
