Thank you! So many people around here use mesquite, but you just can't beat hickory, if you ask me!

Mesquite is so overrated. Hickory also leaves hardly any ash which helps in fire management which is the REAL secret to BBQ.

Co-worker just back from 4 hours away from the office due to kid things (AGAIN!). Remind me to make some kids sometime soon.

We're good friends with the family that runs the local feed store (BBQ for humans. They were a feed store for animals, but about 15 years ago, this rural area turned urban.

They changed with the town and stayed successful.) and they give us a bunch of hickory every now and then. Once, I think we gave them a big hog my father shot. Best darn BBQ in the DFW area.
