We are putting walls in and I feel weird leaving the gap empty
No need for inner wall sheathing....it can harbor insects and rodents even without insulation.
Chickens don't need a she shed or a tiny house.
If that's what you want, build it but leave the chickens out of the equation.
 
So no insulation what so ever?Just the siding and walls will be enough?
Sorry we keep going back and forth, our neighbor had ducks and insists because he had to use heat lamps in the winter and it unfortunately caught fire. I told him we are not going to be using any lamps then he went on about a good insulation

Just siding on the wall studs.
Make sure you have a good roof overhang all the way around and open soffits for good ventilation even in winter.

Yes, you'll hear/see this but really most of the experienced(and logical) keepers in the same climate know better.
