In the past I only used cucumbers in salads or made pickles from them.

An Internet search brought mostly mention of salad recipes but also a surprising number of fried cucumber recipes.

I worked with a man from Vietnam that opened a restaurant in town. He was really proud of his cucumber soup.

Isn't there a cold cuke soup, French I think.

I like cold cucumber soup during hot days, they are easy, just grate as much cucumber as you want add salt and a touch of lemon, of course pepper, and the yogurt or buttermilk, you can add dill, or in my case, lots of garlic 😅 we also tried a soup in Poland which had pickled cucumbers in it, it was surprisingly good, but I can’t speak any polish ( except „Thank you“) so I couldn’t get the recipe 🤷🏻‍♀️

We make pickle soup quite often. I don't have a specific recipe with amounts, so I will explain just how we go about it.
We make chicken soup regularly. May I mention, a large quantity. We eat it over a couple days reheated in 2 portion size quantities. After about half of the soup is consumed,,,,,,,,, then we make pickle soup out of the rest.
A jar of pickles in brine,,,, we use half. Shred those pickles, and add half of the brine salty flavored water also. Save remainder for next soup.
You can add black pepper to taste. No need for any extra salt.
You may need to add some additional water. (few cups to taste)
Often when I have whey from cheese making, I will add that instead of water.
It is also good to take a couple tablespoons of Sour cream, and mix-up with cold soup, and add, to make soup slightly creamy.
Heat up and cook,,,, but no long cooking needed. :old
Dill and sorrel are already in my starter chicken soup... So is some garlic, and of course carrots, celery, and some diced potatoes.
My chicken soup does not contain noodles in it. We do pour it over thin noodles when we serve.
