How do you prepare & eat Kohlrabi?

The root of the Kohlrabi is like a sweeter radish. You can use it like a radish, raw or cooked in dishes. But don't forget that the green tops are edible. The green tops are great cooked like kale or mustard greens.

It's best to pick the kohlrabi before it gets too ripe. Then the green leaves will start to die off and the root becomes woodier. You want to pick them out before it's late.

Also, there are many, many videos on YouTube on how to prepare and eat kohlrabi.

I'm not too creative. I cut up the root and steam it up until just about tender, then I toss in the green tops on top of the white roots. I just like to add butter and salt/pepper to taste. Actually, I don't add salt to anything because of my age/health, but I think you get the point.

I feed the tops to the chickens, they love them !!! I am not really a fan of Kohlrabi ( except feeding the leaves to the chickens 🫣) the only way I can eat it is in a soup with meat balls

Creamed cabbage balls with mini meatballs


- Recipe for 4 portions
Ingredients:
1 roll from the day before,
3 kohlrabi (approx. 250 g),
salt,
1 medium-sized onion,
300 g ground meat(beef/pork)
1 egg (M),
pepper,
1 tsp medium hot mustard,
2 tbsp oil,
1 tbsp butter,
1 tsp flour,
100 g cream,
100 g frozen peas

Soak the bread roll in cold water. In the meantime, peel the kohlrabi and cut out balls using a melon cutter. Cook in 400 ml salted water for about 15 minutes. Then drain, reserving the vegetable water. Cook the kohlrabi leftovers in the water for 20 minutes. Then puree.
Peel and finely dice the onion. Place half of it in a bowl. Add the squeezed out bread roll, the ground meat and the egg and knead together.
Season with salt, pepper and mustard and shape into small balls. Fry in hot oil for about 5 minutes over a medium heat, turning occasionally.
Sauté the remaining diced onion in melted butter.
Add the flour and sauté. Add the pureed cabbage stock and cream, stirring constantly, and bring to the boil. Heat the meatballs, peas and cut cabbage rabi balls in it. Season to taste with salt and pepper.
Cooking time: 40 minutes

That's the joy of having chickens. They get just about anything and everything that we don't like to eat. Nothing goes to waste.

I am sure they do. Maybe I'm a little different, but I really like the green tops of plants like radishes, beets, kohlrabi, etc... I love Swiss Chard, Kale, and spinach which I grow in my raised bed gardens.

I like assorted veggies in different types of soups we cook. Whatever is on hand,, goes to soup.:drool:drool:drool
