There are a few things you can do. If you maintain a healthy flock, gather eggs daily and store properly there is less of a chance of a "bad" egg....but if you are unsure of the freshness you can start with a "float test"....a fresh egg will lay at the bottom of a container of water, as freshness fares the fat end will be seen to lift up of the bottom of the container, a bad or unfresh egg will float completely. From there, for eggs to be cooked outside the shell you can crack the egg into a dish and observe the consistency of the white and yolk, smell for foul outdoor and observe the color of the egg and inside of the shell.
