Too easy to put together & sooooooooo good!
Brown 1lb ground beef (I used ground turkey)
Saute 1 chopped onion, 1 chopped green pepper & a couple cloves chopped garlic in the same skillet until softened - about 10 minutes
Stir in 1 cup uncooked Minute Rice
Spray a 9X13 pan with cooking spray
Shred one small cabbage and put in the bottom of the pan.
Layer the beef/veggie/rice mixture over the cabbage & season with salt & pepper
Pour over 3 cups of low-sodium V8, sprinkle with 1/2 cup shredded mozzarella & bake covered @ 350F for 1-1/2 hours.
Uncover for the last 5 minutes and sprinkle with an additonal 1/2 cup mozzarella then bake until cheese is melted
