That sounds delicious. I like mine with mixed lettuce, chopped tomato, onion, yellow or red peppers, and a jalapano or two. Italian dressing, and sometimes a protein source.

Which lettuce is simple? Romaine? head lettuce? Something dark and leafy I hope, hardly any nutrition in iceberg. I like smooth spinach. We grow a variety of mesclun, but right now I'm stuck with the poor choices of the grocery store. I often go with romaine and spinach, but in early spring I start black seeded simpon, which will grow from valentines day on in stryofoam cups in a south or west window.

Good call! Do you garden at all? I'll share some seeds and growing tips if you want organic lettuce, green onions, carrots, and baby spinach. You can direct seed several tomatos in your part of Texas.
 
No I don't. The soil is terrible quality in Waco.
 
Your an excellent candidate for container gardening! A few old water pans that leak (6" deep - any diameter) will grow lettuce, onions, and short carrots like we grow here. One small bag of organic compost can grow a full 3 monthes of greens and side veggies! I know if you start watching for containers (a drain hole or two in bottem ideal) now, you'll be ready! Just water the plants when you water your birds every day. :D
