And then it happened to US. Made it a whole lot more personal. I have found there is SO much to learn .

Do you have a chart that shows substitutions, etc...or have you just winged it, learning by trial and error?

I love this thread. I myself don't have a wheat intolerance however a friend does. I found a good recipe for peanut butter cookies. It is simple and they are really good. Just one cup of peanut butter and one cup of sugar and an egg. That is it. You do need to press them with a fork as they do not flatten while baking. Bake at 350 degrees for 10 or 12 minutes.
 
I am GF and have been for several years. Just found this thread, I choose not to bake a lot of breads, cakes, pastry for health/weight issues, but do have a couple of reciepes I like to splurge on every now and then. I have also found Betty Crocker has three mixes that are great one brownie, a chocolate chip cookie, and a cake. Also Chex brand cereal has several flavors that are GF. I will post a few reciepes later.
 
Oh, I will have to send my daughter to this thread! She just turned 18 and has really taken off with gluten free cooking & baking. I know she has a blog with step by step instructions and also started to sell some things on etsy.
She started to blog because as a young girl starting out cooking she thought putting it up for others to see step by step would help them.
She was recently diagnosed with celiac after years of going to numerous doctors for stomache complaints!! She is doing much better with the gluten free diet.
