Gluten Free Baking (& Cooking) Thread

The silk brand has a new milk, made from coconut, it is awesome! Has a definate coconut flavor so wouldn't work for everything, but worth trying.

We use extra-virgin coconut oil as a butter replacement all the time. We got a whole coconut to crack and use once, and, umm, never got around to cracking it.
 
I don't like the coconut "milk" straight from the coconut, but love fresh coconut over anything you can get in the store.
 
I'm so glad I saw this thread! My Asst. Prin. grandson was just diagnosed with Celiac's and they are having a really hard time here in the land of Mexican food and tortillas. I'm going to try and put together a list of recipes and foods for them that is easier than trying to struggle through all the websites. This way he has something tasty while they do research on what he can and can't have.
 
Actually I find many items we eat have a mexican flare that are GF/DF. We make tamales GF, nachos, taco's. It seems hard at first but it gets easier if you know how to cook. The biggest issue I find is half of the people I talk to consider making a pot of hamburger helper cooking (before they were diagnosed) and do not know how to follow a recipe. I do not make any convenience foods from a package and we have gone to very basic meals of fruit, veggies, meat and find we don't miss the GF items too much anymore.
*Bionaturae has one of the best replacement noodles if they are looking to mimic foods the child is already used to and there are many awesome recipe books to be found

Yes there very well may be other allergies but I have found ways to work around all of them. I have one with no wheat, dairy, eggs. One with no soy, wheat, mild dairy reactions

No slight intended towards you, at all. After we figured out that wheat was big offender for us, it was fairly easy to still make lots of family favorites/comfort food...now that we are trying to avoid corn it has become much harder (and cow's milk!).

Still learning here! Please, take no offense.
