Whey is the byproduct of cheese making. I make raw whey by straining yogurt (or kefir). When you strain it, the curds make a cheese, and the whey--the liquid, drains out. Then you have two products. The yo-cheese, which is similar to greek style yogurt, --nice and thich and creamy. the whey you can use for lactofermenting (which is what this is), use in baking, making pancakes etc. You don't need to add the whey, if yo don't have it. It jsut helps with the soaking. If you soak the beans long overnight without it, they will be fine.
 
Thanks, I thought you were talking about the liquid that seperates in yogourt, but wasn't sure. I used to make cheese w/ my gma (was raised by her) when we had milk goats. We (my husband and I) live in town now so saddly no milk goats, but if we ever get to move back to the country that is top of my list.
 
I didn't have any whey on hand nor yogurt (we love yo-cheese at our house) to drain, so I just added a dollop of apple cider vinegar to the water and boiled my beans for 2 minutes, let them sit for a couple of hours to soak and then cooked them.....and followed the recipe....

Kitty, Your web site is awesome! So many wonderful looking recipes! My daughter would love me to make your Fruit Pizza for her BD. We live in podunk, though, and I am afraid I will have to order things like the creamed coconut online.
