Gluten-free Bread recipes?

Can't find the white bread one right this second, sorry. Remind me if I don't get it today.

Farmhouse Seed Bread---GF

This is my main recipe, it is best after it is a few days old. It is very high fibre and healthier than some breads, but not quite as tasty. Good sandwich bread.

(I'm going off memory here, so apologies if instructions are unclear)
1080 grams flour
1 1/2 Tbsp salt
1575 g warm water
3 Tbsp yeast
3 Tbsp sugar
1/2 c oil
3/4 c psyllium husk
1/2 c unground chia

Mix flour and salt. I use a kitchenaid mixer so the flour and salt go in the mixing bowl.

In another bowl, put yeast and sugar in water, stir, and add oil.

Grind the chia seeds and mix with psyllium husk in separate bowl. Add psyllium/chia mix to oil, yeast, and sugar. Stir.

It will be lumpy at this point, and as one kiddo succinctly put it, look like ogre boogers. Add to flour/salt and mix on "2" with dough hook till combined.

Let rise, punch down, and put in greased loaf pans. (I think it makes around 3--4 loaves) Let rise in warm oven for a bit and cook at 350 for 65--70 min or until it looks done.

By the way, I started this thread a bit ago but it never got off the ground. Still has a few good recipes like this one.

This looks really good for sandwich bread, as well as a few things I can add to make bread for soups, etc. Thank you so much, saved it to favs bar. LOL Will check out thread later, we don't need to have gluten free food, but trying to cut down on carbs and still eat close to how we like. Somethings work, some don't so this bread looks like it will fill the bill. I use Kitchenaid mixer also and have everything on hand except psyllium, but that's easy to pick up, Maybe Sunday if I have the time. Will let you know how it comes out

My first attempt at GF bread just came out of the oven. :lau Based on the Joy of Cooking White Bread recipe, with GF flour. Had to add 2 whole eggs and a white for binding, since I had no other binding agent on hand. Flavor is great. I like the crunchy, crumbly crust. Inner texture is like fudge. I have NO intention of ever reproducing this particular "recipe".

Let it sit for a few days if it seems gooey. It can work magic. The high fibre recipe I just posted is gummy and impossible to cut until it's cooled off completely.
 
GF hamburger buns (white bread)

Yeast mix:
1c warm water
3 TBSP honey
2 1/2 tsp dry active yeast

Dry ingredients:
3 1/2 cup GF flour mix
1 TBSP Xantham gum
1 1/2 tsp salt

Wet ingredients:
3 eggs at room temp
1/2 c water
1/4 c olive oil
1 tsp ACV

Instructions
Line two large sheet pans with parchment papwer or silicone liners.To proof the yeast, combine the honey and warm water in a small mixing bowl and stir until honey is mostly dissolved. Sprinkle in the yeast and give it a quick stir. Allow the yeast to proof for 7 minutes (NO more NO less.) Make sure you have the other wet & dry ingredients mixed and ready to go when the 7min are up.

Using a heavy duty mixer, combine the dry ingredients. In a separate mixing bowl, whisk together the eggs, oil, water, and vinegar. When the yeast is done proofing, add the wet ingredients to the dry. Stir until it's a little paste-like, then add the yeast mixture. Using your mixer's low speed setting, mix for about 30 seconds. Scrape down the sides of the bow then mix on medium for about 2 minutes or until dough is smooth.

Drop 1/2 c dough on baking sheet, repeat. Allow buns to rise about an hour. Bake in a preheated oven at 375F for about 18--20 min, when the tops are a light golden brown. Immediately let buns cool on wire racks.
