After we processed it, I cleaned it, then put it in a big pot of salt water, covered, stuck it in the refrigerator for 3 days... then last night I got it out rinsed it off alittle then stuffed it in my crockpot, poured alittle red wine over it, about a cup of water, sprinkled Italian seasoning on it and paprika on it, then put the lid on and cooked it all night on low, in the morning it smelled so good. I think it cooked 14.5 hours... let it cool, picked it off the bones and added it to my cooked noodles... made the noodles the night before and let them dry on the counter. Cooked them in chicken broth....
How do you make your dumplings/noodles? Just curious, my family makes ours from rolled biscuit dough, cuts them real thin and let dry for a few hours. Never had the wide ones!
Well usually I use my mother in laws recipe, but I lost it... I emailed her to send it to me cause its better than the one I used yesterday. When she emails it to me I'll send it to you........ but basically its so much flour, eggs, water (I think), mix, roll, cut and let dry over night.

I'd like you to post your noodles recipe too--they look so much better than my attempts! We will be processing extra roos in a couple more weeks. Thanks for posting your method--I'm going to use your directions!
Noodle Recipe...
6 eggs beaten
1 cup of flour to start
salt 1 teaspoon
1/2 teaspoon of pepper
mix together
add more flour as needed
roll out and cut into strips
and let dry overnight
