If you want pets, get heritage turkeys. They live longer, and don't look as clumsy as broad-breasted turkeys. Broad-breasted turkeys are great for meat, but just don't have the grace and natural appearance of heritage birds. As to what kind, the best thing you could do is look at pictures and decide what color or colors you like best. If you like natural looking birds, you would want standard bronzes or Narragansetts. Bourbon reds are very popular as well, but look less like wild birds and more like domestic chickens (colorwise). Blues and chocolates are also easy to obtain, but again don't look wild. You may also be able to buy domesticated wild turkeys, but they are less likely to be so friendly.
I agree with Celie on the imprinting and making buddies with food. The more time you spend with them in the brooder, the more they will like you in the yard.
