How many quails required for one serving?
Kinda depends on dish and cooking
In general 1-2 quail per adult and 1/2 quail per child
But we do 1/2 fried each with breakfast
Multiple legs if doing a buffalo quail legs
Typically 3-4 breasts each for quail poppers
 
For lunch yesterday I spatchcocked a couple and browned em off, put in the oven for an hour, made onion gravy with the drippins had a pot of pinto beans goin, some lightnin bread and Mennonite sweet butter with white onion.. mighty good vittles..

We had 10 breasts packaged for quail poppers this week. We each had 3 for dinner and mr muddy had remaining 4 for lunch yesterday
 
Do you just peel the skin off on the quail?

I do several cuts before peeling a chicken like a banana.
Sharp scissors or kitchen shears off with the head I drop floppin carcasses into a deep box (usually a 30 pack Coors light box there seems to be a surplus of them in the barn near the beer fridge for just such an occasion lol) that way I can throw away or burn afterwards (less clean up) .. Grab bird breast side up, pull gently left and right at neck opening, rips downward exposing full breast, under the skin at the wings on the back touch 2 fingers together pull up and down gently all the way to the feather patch on base of tail end, pull left side down below feathers where feet start then do right side cut off feet at joints, snip off wings, cut neck down flush, at the point of breast I snip a small hole and stick a finger up to neck and drag all innerds out all the way to the vent, snip off vent and any trash remaining, grab patch of feathers at base of back and twist off, put in big bowl of cool water.. and do another.. and another.. you get the picture..

Laughing at the beer box comment….I think I may have kiki’d 😂
Similar here except the shears for dispatch…..I prefer the twist and pop kinda like opening the bottles in the box
