Granny's gone and done it again

sort of but still use a candy thermometer just to be sure TO much work and expense to take a chance.
I never had one of those. Just cold water . Mom insisted you MUST use a heavy alum. kettle and a wooden spoon.
 
I tried making Divinity one year and managed to burn up 2 mixers , afraid to attempt again. I like/am used to the light and fluffy type. NOT the heavy/dense crap they sell in the store.
Humidity outside has to be very low for that to turn out .

I use stainiless steel but heavy bottom (like myself) and a wisk and then a heavy industrial spatula
