Granny's gone and done it again

I hear you, Granny, but while I don't care for regular yogurt, I LOVE greek yogurt. It is thick and creamy like DQ soft serve ice cream and full of protein and good stuff that keeps you from spending too much time in the bathroom. I know you like pudding. I have made yogurt and very similar to making pudding except you keep it warm longer before refrigerating. NOT long enough to rot!
Greek yogurt, yuck! I used to like regular yogurt until i found out how much sugar they put in it!

They do grow fast. Did i tell you i trapped all but 2 of the guineas in their coop? Then i went out looking after dark and found one sitting on the ground near the coop. No idea where I the other one is. Did i show you the nest box i made of a $4. Night table?View attachment 1221744
I got your card today, cappy. Thank you. What do I do with the seeds?

Have you seen this? Duck Prosciutto | Michael Ruhlman
Quote from above article:
I think I already explained recipe and method but in response to comment and for those who want to try it, complete recipe is in
Charcuterie, but it's no more difficult than this: pack one duck breast in kosher salt, cover and refrigerate 24 hours. Remove from salt, rinse it, dry it, wrap in cheesecloth and hang for a week or so. A general rule is dry-cured products are done when they lose 30% of their weight. If you're concerned, weigh your breast before you hang to dry and record the weight.
Hmmm, weight my breast.?
