Well we/I got 200 pounds of sausage into the casings and the other 100 mixed and ready for the stuffer. Snowing again I think we are over an inch and under 6 inches. Rinse out 4 lbs of casings NOT sure how much more I need to wash out.

I think if he's not in the bobcat tomorrow Gene is going in to start smoking the sausage. And BCY broking up again. I also have some pork steak to package and then I am going to try and brine some pork hocks into ham hocks.

Mass was nice until the exit song they changed what was on the board to "go tell it on the mountain" I almost beat the Priest out the doors. I absolutely ABHOR that song would actually rather listen to rap with all the foul language then that song.

Had a few blow outs while putting the sausage in the casing but then just twist it off and squeeze out the meant and stuff it again
