I have been baking bread for about 40 years and I'm still learning, practicing, experimenting. Today's batch came out great. Next batch might flop, lol. I love my bread when it works, it makes wonderful toast. Otherwise I hardly ever eat bread. This is about 60-40 unbleached white-whole wheat with a dab of wheat germ and flax seed added. I'm so happy my shoulders are strong enough to knead again!Mmmm... Bring on the butter !
