thanks Blue. I didnt cut anything up. the potatoes were very small . I dont peel carrots. I think the best flavor is in the skin.Granny, I roasted a butternut squash and it was so yummy. But it's hard to peel and cut up. Carrots, parsnips if you like them, potatoes, and sweet potatoes are all good roasted. Peel and cut into one-inch chunks. Put in a bowl and drizzle a Tbsp or two of oil over them. Add salt and pepper and toss well. Heat oven to 425. Place vegs on a flat cooking sheet. Don't crowd! Bake 30-35 min. Best if you can turn with a spatula at 10 and 20 min. Yumyum!
Oops, I forgot to say, for easy peazy cleanup, put a sheet of parchment paper on your cooking sheet under the vegs.
