You start out by making a crepe, a real thin pancake. Then you put a glop of filling on each one, made of sweetened cream cheese and ricotta cheese. It's sweetened with honey and flavored with lemon juice and cinnamon (bc I didn't have cardamom) and had an egg beaten into it. Tgen you fold the crepe over the filling to make like a pocket, and you fry it. Serve it with this blueberry sauce. I sprinkled a little powdered sugar over them for pretty. They were a bit of work, but good! Good night!
It's not so simple. They have to find the right amounts for the right price at the right time. Berry growers watch the weather and calculate when the fruit will be ripe. They have to have buyers all lined up before the berries are ripe so they will be fresh for us to buy at the store. Lot of times there are brokers that buy whole harvests and then resell it, kind of like middlemen, between the farmers and the grocery stores.
It's a far cry from a local farmers market.
