Granny's gone and done it again

Say Jane can/could you use a Roma type mater and make fried green maters. Not that I have ever had them. But curious
Yes, I canned lots of green Roma's last year in half pint jars, add 2 T of white vinegar & 1/2 T salt to water in each jar, dh says they are better fried thaN fresh ones.
