Today my GC* googled symptoms of what she has been dx'd with: Non-celiac Gluten Sensitivity. Anxiety and depression are included in that list. She has virtually all the symptoms though. It has been really hard for her to live without bread/ gluten entirely but I think this has convinced her she has to. We may have to become a GF household for her sake. Sigh. I love my homemade bread. But I love her more.

There are some pretty good gluten free breads out there.

The new Muscadine Jelly Ma has made is addictive. I wish there was a recipe on how to make it more like a jam...

This is what we use.
The juice of pulpy fruit is often a bit jelly-like after it sits for a bit. I don't think it would take much to get a jam consistency.

When they're in ..clinic..they can't have their phones or laptops. In some cases. They don't let my daughter when she goes in. It's straight therapy while in.

My daughter goes in when she's suicidal though. She's was wise enough to let them know..or should I say we'll enough. She wasn't a couple of times. This last time she was sent to Florida for over a month. It seems to have really helped her! That's a long trip from Utah.

I've never made gluten free bread but I've dabbled with the different kinds of flour for pancakes. Gluten free helps irritable bowel. My favorite gluten free store bread is the Hawaiian. It's not near like home made though

There are some pretty good gluten free breads out there.

She hasn't developed a taste for them yet ... I have GF breads, bagels, tortillas available. She hasn't gotten past the yuck factor yet, lol. She eats lettuce wraps instead. On the plus side, she's losing weight. Which she can afford.
