Granny's gone and done it again

Spaghetti squash with beef chunks, chopped onions and chopped apples in the hollow, I laid a thin slice of beef on top and baked it at 400 degrees for one hour and forty five minutes. It was perfectly done and delicious!

Made my mouth water, Troyer! Although we no longer serve beef here bc of GC's dietary restrictions. Post something with poultry or fish!

Thank you, yes mostly. No pain tonight, no fever anyway. Just feel weak and a bit lethargic. Did some little chores today. And realized how very quickly I ran out of energy though! Napped a lot. Will talk to dr about the potassium thing.
 
DH is feeling a little better after his covid and flu shots, they always knock him flat for a day or two. So glad GC still lives with us so she could step up last night, no way could he have taken me to the ER! I'm really glad I had not gone with him to get my shots. Don't know why I didn't but I'm glad. Maybe next week. I usually get a sore arm but that's sll.
 
Glad to hear that you are feeling better, Blue girl. I have occasional hypokalemia also. It can make you feel tired. I've wound up in the ER getting IV potassium pumped into me when GI bugs have gotten the better of me and critically dropped my potassium. Once it was so bad I my hands were paralyzed. Asked the doc why I kept dropping it and he just shrugged and said some folks have potassium wasting kidneys and you are probably one of them. One doctor told me to keep a container of salt substitute on hand and if I felt like I was dropping to swallow down a half a teaspoon. I do that but man, that stuff is rank.

Small world. I did spaghetti squash for dinner also. Made real spaghetti for DH and I had it with my turkey meat sauce. It almost reminds me of the real thing, sigh.

Weird day today. For 3 years we have been begging the township road commissioner to put a drainage tube at the base of our drive way. We live on the top of a medium sized ridge with a taller ridge hill on either side of us so all the water was draining down and settling at our driveway for years. Every time they recrowned the road, they sloped it more towards our driveway and made the standing water worse.

Two years ago, after an ice storm, a snow storm, a thaw and another ice storm, we had an ice skating rink out front and an Amish horse went down and couldn't get up. Took buckets of ash and a lot of pushing and pulling to get her back on her feet again. DH started sending them pics but we got ignored until this February when somebody finally showed up to look the situation over. Yep, we needed a drainage tube under our driveway and new ditches dug. August came and no ditches or anything else. DH called two weeks ago and talked directly to the township commissioners meeting. Oops, they had dropped us through a crack and the order never got sent in. They would get on it. My husband was persistent and called this week again and they assured him they would be here this week.

Miracles do happen, they finally showed up today and put the drain tube in and dug out the ditches. Naturally they are now calling for heavy rain tonight so we will have an interesting mess out front until they get around to re-rocking the road but hey! We got us a drain tube! Yay!

And it only took three years! 40 feet by 16 inches.
