Granny's gone and done it again

Ma used to make the Enchiladas the regular way of individual rolls. One day I suggested she just make layers using the tortillas flat and call it Enchilada pie. That's all she makes now and it is on the agenda for this week. This may have this new recipe for the sauce used.
 
There will be no Cilantro in hers as neither of us care for it. It one of the few herbs we just don't care for. BBH may very well use it. I see no reason that those who like it shouldn't include it.
i understand, culantro is not for everyone, it is strong, and pungent, I have family members in the same household that like and others that cant stand it....I personally like it. I dont like Curry, although i dont think its an herb, its a seasoning mix....dont care for it.

I do like curry and other spicy foods made with cayenne powder and jalapeno pepper. Don't like the flavor of Habanero.
 
We be going in to town soon. Need a few things and have to deliver some eggs to a regular customer. Sure am glad the hens are back from a brief vacation.
congratulations on the eggs......sadly, mine are extending that vacation.....molt, heat, rain, poor things ae stressed.

Ma and I both were more and raised in South Central FL and know the climate all to well even farther south in the summers. My family used to visit with friends in Miami in the early 50's. I have faint memories of the old style southern houses we went to back then. No AC.

yes to ceyenne and jalapeno pepper, I use habaneros in a mix that I use to deworm my chickens, raised em up on it, it works in my flock.

my aunt used to live in an old southern style house like that, no AC, and actually had a chimney in the living room, can you imagine?
