Oh man, it's all so good. Jambalaya: chicken and sausage and the holy trinity (onions, bell peppers, celery) and rice. Étouffée: lots of butter and shrimp or crawfish and trinity. Served over rice with a crusty pistolette. Gumbo: starts with a roux, then add trinity and any sort of meat you like (chicken and sausage, seafood, wild game, duck, etcetera) and okra. Put rice in it. Some people put a glob of potato salad in, too, but not me. Red beans and rice is pretty self-explanatory.



Non of this explains anything to me ! :lau Trinity, pistolette (isnt that a gun)? roux I dont know any of those words. LOL I am a lost cause.


I already explained trinity: onions, bell peppers, and celery. Sautéed in butter, it's the foundation of EVERYTHING.

Roux takes a lifetime to perfect. Flour and oil, low heat in cast iron. Stir, stir, stir, stir. The darker, the better. If you scorch it, start over.

I aint doing all that mess ! I dont have and dont want a lifetime to learn how to cook. hahahaa
