2 lbs of dry beans, Great Northern or Navy sort thru and pick out the broken , discolored, and any stones or clumps of dirt rinse and then cover with about twice as much water (I add a little soda) soak over night.
Drain , rinse again, and then boil until just tender (again I add a little soda) keep an eye on this as it loves to boil over , skim the foam as needed. Drain and rinse again.
While beans are boiling make the "sauce"
1 1/2 cups brown sugar
1/2 cup ketchup
1/2 cup molassas
1/2 tsp of black pepper ( I use more)
1 large onion diced
(I also add a couple squirts of mustard what ever you have)
mix all together you can add a little water to any containers of the molasses or ketchup and swish and add back to the sauce
add beans to mixture in large roaster add your left over ham bone and what ever bits you trimmed off. Add enough water to cover the beans
Bake at 350* for 2 to 3 hours or until beans are done. Stir occasionally When almost done pull out the ham bone and remove any bits still attached, can cut up if you wish. Bone is now DONE
you may have to add water occassionally to keep beans from getting to dry
if you like your beans a little darker remover cover and bake for a bit.
REALLY good with fresh homemade bread or a take and bake chibattia
FREEZES WELL
can also be done in a large crock pot
