Here's what I do:

Put eggs in a pot with enough water to cover. Put in a few pinches of baking soda.

Bring to a boil and cook for 3 minutes.

Cover and remove from heat; let sit for 15 minutes.

Drain water and dump eggs into an ice bath until they're cooled.

Put an egg in a jelly jar with a lid. Give a few good shakes. Peel comes right off.

i steam my eggs in a rice steamer..works good..i do let them sit for a while in ice water too..
