mom did celery, onion and I dont have a clue. I just know thats what she made me cut up.and that's maybe why people actually eat itBesides its also what I like/prefer and no cornbread or sausage in my stuffing please. I am sure its all based on what we were raised on. For me/us its giblet stuffing with sage , poultry seasoning, onions, celery and lots of butter. And other spices.
